Blueberry Muffins (makes 12)
1 cup of self-raising flour
1 cup of wholemeal self-raising flour
1/2 cup of brown sugar
90g of melted butter
1/2 cup of milk
1/2 cup cream
1 punnet of fresh Oz Group Blueberries
Preheat oven to 180°c and grease muffin try.
Place dry ingredients in mixing bowl and stir together.
Add butter, cream, milk and egg all at once and stir until just combined.
Layer muffin mixture and blueberries into muffin moulds.
Cook for 25 minutes or until skewer comes out clean.
Add to kid’s lunchboxes or eat whilst still warm.
