Blueberry & Apple Scrolls (Makes 18)
1 punnet of delicious Oz Group blueberries
400g tin of pie apple
3 sheets of puff pastry
Defrost puff pastry sheets and preheat the oven to 180°c.
Spread a thin layer of pie apple onto the pastry, leaving one end of each sheet bare. Sprinkle the blueberries over the apple, ensuring they are spread over the width of each sheet.
Roll the pastry sheets into a tight log, with the bare end of each pastry sheet rolled last to help with any ingredient spill over.
Cut the pastry logs into 5 equal sections, standing these up on a baking tray. Spread out over multiple trays, as they will expand.
Cook until golden brown. Great snack for kids’ lunchboxes!
